INGREDIENTS
- 500ml of milk
- 250 ml of thick cream
- 1 vanilla pod or 1 teaspoon vanilla extract
- 6 egg yolks
- 100g sugar
- 60 ml of whisky/cognac/rum/bourdon
- 20g nutmeg
- 1 pinch of cinnamon
- 1 pinch of salt
- 1 pinch of cloves

For your eggnog, start by putting your egg yolks in a salad bowl. Then add the sugar and mix well with a whisk. You should get a smooth, frothy and flexible result.

In a saucepan, pour the milk, the liquid cream, the grated nutmeg, the pinch of cloves, the pinch of cinnamon and the vanilla. If you are using the vanilla extract, simply pour it in but if you are using the pod, split it in two then remove the seeds with a spoon before adding to the preparation. Mix and bring everything to the boil.

Then remove from the heat and pour in two or three times into the first preparation while stirring well with a whisk between each addition. Stir until it is well combined.

Pour the mixture back into the saucepan and place over low heat. Cook until the temperature reaches 83 degrees, stirring constantly. Above all, do not stop stirring until the end of cooking.

Remove from the heat and if necessary, pass the preparation through a hand blender in case you used vanilla seeds or simply pass it through a sieve.

Then add the rum or other alcohol you use. It can be bourdon, whiskey or cognac. Mix, serve hot or reserve in the refrigerator in an airtight container for at least 2 hours. You can serve it add a cinnamon stick, sprinkle with cinnamon if necessary and enjoy. Enjoy.
