PREPARATION
1
To prepare your chili con carne, cut your onions and peppers into small cubes, grate your garlic cloves, grate the tomato, cut the coriander stems and set aside. In this recipe, we will use cooked canned beans. However, you can take uncooked beans and cook them yourself. In this case, soak your beans the day before in plenty of water. Then cook for about 1h30 min, adding a tablespoon of bicarbonate
2
Next, melt the butter over low heat in a saucepan (if using oil, just heat it) and then brown the onion. Cook for a few minutes, stirring constantly.
3
Then add the peppers, garlic and mix well. Add the grated tomato, chopped coriander stem and spices including oregano, cumin, chili powder. Mix everything well, cover and cook for about 5 minutes on low heat. You will obviously have to stir from time to time
4
Add the minced meat to the mixture. Make sure to crumble it properly to avoid having large pieces of meat in your chili con carne. Mix well so that the meat absorbs the taste of the spices. Cover everything and simmer for about 5 minutes until the meat changes color. Stir from time to time!
5
Once the meat is nicely browned and well crumbled, add the tomato paste and 400 ml of beef stock. You can add water if you don't have any stock, in which case add 1 stock cube. Salt and pepper to taste. Cover and increase the cooking time to medium heat, cook for 20 minutes, remembering to stir from time to time to prevent the minced meat from sticking to the bottom of the pan.
6
Rinse and drain the beans and corn, then add them to the mixture while mixing gently. You can add a little more chili, it all depends on your ability to tolerate the spiciness. At the same time, if you don't like chili at all, don't worry, it's an ingredient that is not at all necessary for this recipe
7
For more flavor, add 2 teaspoons of lemon or a teaspoon of vinegar and let it simmer for about 10 minutes. You can choose to make your chili con carne in the oven, in this case, after adding the beans and corn, cover and bake for 25 minutes. It's ready! In the meantime, you can cook rice to accompany your preparation, in fact it is the best accompaniment for this recipe. Serve and enjoy with family or friends. Enjoy your meal!
