Gougères au fromage

An easy aperitif idea to serve to your guests or to enjoy with friends? Gougères are just perfect for the occasion. They are small choux pastries filled with extremely delicious cheese, easy to make, quick and above all not expensive at all. Just a few minutes of preparation, 25 minutes of cooking and it's ready. In this article, I offer you a recipe for gougères that are well puffed and crispy as we like them. You have no good reason not to make this recipe, gather your ingredients and let's go!

  • 90g grated cheese
  • A pinch of salt
  • 12.5 cl of water
  • 12.5cl of milk

Before starting your preparation, preheat your oven to 180 degrees

To prepare the gougères, you need to make choux pastry just like with the recipe for smoked salmon choux. So, melt the butter in the water and milk. In a saucepan, pour the water, milk, butter and a pinch of salt then bring to the boil while stirring regularly.

Then add the flour and stir well. You know that for this step you have to be careful to avoid lumps and above all you have to stir well if you want to have puffed up choux at the end of cooking. When you add the flour, make sure to stir well until you get a smooth ball of dough.

This dough needs to be dried out. Stir well against the sides of the pan over medium heat for about 5 minutes. This is a bit of a difficult step but it's a bit of a price to pay for successful choux buns.

When the dough is dry, put it in a bowl and add the eggs. Add the eggs gradually and mix the mixture well until it is smooth. Use a spatula, a whisk or opt for a mixer at minimum speed. The dough should be smooth, supple and not too liquid.

Then add the grated cheese and mix well. Use a cheese that melts like comte, cheddar, Emmental.

Put the predation in a piping bag and make small circles on a baking sheet covered with baking paper. Take care to space them out because it will swell. You can also arrange the dough with a spoon by making small regular piles always quite spaced. However, with the piping bag, you will have prettier gougères. To have prettier and nicely browned gougères, you can make a little egg wash and place a very small quantity on the choux pastry with a kitchen brush before baking. To make the egg wash, just mix an egg yolk that you mix with a spoonful of water. Before baking, grate a little cheese on top

Bake for 25-30 min at 180 degrees depending on the size of your choux (they must be very dry and golden) Your gougères are ready, you can grate a little more cheese on top immediately after removing from the oven (optional) and enjoy immediately with your guests. Enjoy your meal!
