Cantonese rice

Riz cantonais

Cantonese rice is the perfect recipe for a quick dinner in the evening. No difficulty during cooking, 15 minutes and the meal is served. Basically it was arranged rice, that is to say, the rest of rice from the fridge that we took and tried to add ingredients quickly. It is a traditional Asian dish more precisely from China and it is also one of the most consumed Chinese dishes in the West. Gather your ingredients and let's make traditional Chinese Cantonese rice.

INGREDIENTS

  • 300g cooked rice
  • 70g of peas
  • 50g char siu pork
  • 50g Chinese canton sausage or chorizo
  • 70g sweet corn
  • 2 eggs
  • 1 tablespoon vegetable oil
  • 1 carrot
  • 1 tablespoon sesame oil
  • Pepper
  • salt
  • 2 Chinese chives
  • 1 tablespoon soy sauce

PREPARATION

To prepare Cantonese rice, start by cutting your ingredients separately. Cut the carrot and spring onions into small cubes, as well as the pork. Char siu pork is in fact boneless pork cooked in a firm oven over a fire. You can get it in Chinese grocery stores. If you don't have spring onions, you can use onions.

Then beat the eggs and cut the sausages into small pieces. If you have trouble finding typical Chinese sausages, you can use chorizo although with Cantonese Chinese sausages your recipe would be original and would have a better taste. You can also replace the sausages with diced chicken or small shrimp or ham.

Heat a non-stick pan and grill the sausages for a few minutes then remove.

Then add the sesame oil and introduce the pork. Let it simmer for about 2 minutes and add the small diced carrots, soy sauce, peas and corn. Mix well, let it simmer for about 2 minutes and remove the preparation.

Vegetable oil in the pan then pour the rice cooked in advance. The rice should be cooked but overcooked, it should be dry. Add the salt and pepper, then mix the preparation and let heat for 2 min while stirring constantly

Then beat the eggs and pour them all at once into the rice and mix immediately. Mix well until the eggs are distributed over the rice. Pour in the first preparation of vegetables and meats as well as the spring onions or onions and mix well. Your Cantonese rice is ready. There is another way to incorporate the eggs into the preparation which is to boil the eggs separately before adding them, this is what we have done here in this recipe. Serve and eat hot.
