It is usually made with crème fraîche but you should also know that the original recipe is simply made without crème fraîche, obviously that makes fewer calories. To start preparing your carbonara pasta, boil your pasta in 2 liters of water and add a tablespoon of olive oil, a pinch of salt and cook for 5-7 minutes depending on the time indicated on the packet of pasta you are using. Then drain, but do not let the pasta get too dry. Drain as much as possible with a skimmer. The goal here is to keep the pasta with a little water. There is a lot of debate about using olive oil to boil pasta, but it is very important to do so because it will prevent the preparation from boiling over. If you don't want to, don't do it.

Cut your bacon into sticks or cubes, as you wish.

Heat a tablespoon of olive oil in a saucepan or sauté pan and brown the bacon and cook for a few minutes.

At the same time, crack the eggs and mix well, adding salt and pepper. The parmesan and bacon already contain enough salt, so be careful.

Dip the pasta in the eggs, mix, pour into the mixture and reduce the heat to low.

Then mix well and immediately add the grated parmesan and a little more pepper. And mix well and it's ready. Your original carbonara pasta is ready. You can also make this recipe with a crème fraîche sauce. To do this, brown the onions and bacon for 5-6 minutes then add the cream, then the pepper, salt and grated parmesan. Bring to the boil and add your cooked and drained pasta and mix. Then add the beaten eggs and mix. And it's ready. Enjoy!
