To make the mushroom velouté, start by cutting the mushrooms into quarters, small cubes or strips. Choose the option that suits you. You can also choose to leave your mushrooms whole.

In a saucepan, pour a drizzle of olive oil and brown the chopped garlic and onion, then add the mushrooms and mix. Sweat the mushrooms properly because, as you know, they still contain enough water. Cook over low heat, adding a little salt until they are nicely colored. This will take about 4-5 minutes.

At the same time, melt the butter in a saucepan and make a roux. Pour in the flour all at once and mix immediately, adding a little salt and pepper.

Then deglaze the preparation with the chicken stock, mix well with a whisk then add the liquid cream and the nutmeg.

Then add the well-reduced and well-coloured mushrooms to the preparation, reserving a few slices or pieces for decoration, bring to the boil. As soon as the preparation begins to boil, remove from the heat and move on to the last step.

Mix the preparation well and adjust the seasoning. Serve in bowls or verrines, add the reserved mushroom slices, a few chopped coriander or parsley leaves and enjoy hot.
