Homemade Pineapple Wine

Wine is indeed fermented juice but not only that! It would not be a question of just taking juice, fermenting it and saying that it is wine. Wine is much more than that. Wine can be made from foods or fruits including grapes, watermelon, orange, pineapple and many other fruits. In this article, I show you in detail how to make a magnificent homemade pineapple wine. You will need about 25 days, a few ingredients and instructions of course to follow to taste a wine with pineapple as a base product and made yourself.

  • 1500g pineapple
  • 500g sugar
  • 2 liters of water
  • 1 lime
  • A cup of tea (green tea)
  • A spoonful of wine yeast

INSTRUCTIONS

To begin, first wash your pineapple in cold water, then remove the head and the foot of the pineapple because they can contain dirt and we must do things with maximum hygiene.

Then cut the pineapple into small pieces without peeling it. The skin of the pineapple, like many other fruits, contains a lot of yeast, which will be quite interesting for our wine. Moreover, these skins are also used to make other drinks, including bissap juice , etc.

Then put the pineapples, water, lemon juice and tea in a saucepan (pot), stir with a spatula, let boil.

Then add the sugar, stir and let reach room temperature.

Then pour the mixture into a fermenter, no need for an industrial fermenter. You can simply use a jar with a tap.

Add the wine yeast, shake the jar, close the jar tightly and the tap and let it ferment for 4 days. This is because the acid in pineapple, especially ascorbic acid (vitamin C) and malic acid, can affect fermentation by killing the yeast or reducing its activity. However, some yeast strains can be more resistant to acid and still ferment efficiently. Therefore, it is important to consider the acidity of pineapple when choosing yeast strains for fermentation and to monitor the process carefully to ensure that fermentation is going well. As for the yeast, it is possible to use yeasts commonly used for wine fermentation, such as Saccharomyces cerevisiae, for pineapple wine fermentation. However, there is also the possibility of using yeasts specific to tropical fruit fermentation, such as Saccharomyces uvarum or Brettanomyces bruxellensis, which can add unique flavors to pineapple wine. You will need to choose a yeast that is appropriate for the sugar content of your pineapple wine and also make sure that the yeast is healthy and viable before using it.

During these four days, check the jar and shake it once or twice a day for 5 seconds to prevent mold from setting in.

After 4 days, remove the liquid. Use a hose that you will attach to the tap to let the liquid out and pour into another jar

You can add vodka, soda, whiskey… and then close it tightly.

Then let it ferment for 7 more days. It is extremely important to keep the fermentation conditions clean and sterile to avoid contamination by unwanted microorganisms.

Bottle the preparation and add 10g of sugar for 1 liter of wine. You can add a little more according to your convenience, but the ideal would be to respect this grammage of 10g for 1 liter.

Let your homemade pineapple wine ferment for another 2 weeks before consuming it. If you follow all the ingredients, weights and instructions in this recipe, you will have a wine with an alcohol content of 11.3%.
