Bolognese is indeed the filling. It must be well seasoned, if the filling is poorly made or poorly seasoned, then it is clear that your recipe is a failure. Here is how you must make a good filling. Before starting the preparation, preheat the oven to 180 degrees
The filling

Start by cutting your carrots into cubes (the smallest possible cubes), also cut the celery, then the carrots.

Then place a saucepan on your hob and add the olive oil and brown the chopped vegetables. This will bring out the flavour of the vegetables a little more and will also remove the excess water contained in the carrots.

Then add the ground beef, mix and cook for 3 minutes, just enough time to grill it a little and color it.
