Red velvet cake

Redvelvet cake

Red velvet cake is really the perfect dessert for a romantic date. It is an American cake that is made of two or more red cakes topped with whipped cream. The cakes can be light red or dark red, it all depends on you and the amount of coloring you put in them. It is a fairly easy recipe to make, but it requires techniques that I show you throughout this article. Gather your ingredients and let's go!

INGREDIENTS

  • 2 tbsp vanilla powder
  • 180 ml of fermented milk or buttermilk
  • 260g flour
  • 20g unsweetened cocoa powder
  • 1 pinch of salt
  • 90g butter
  • 280g caster sugar
  • 3 eggs
  • 1 sachet of yeast
  • 2 tsp liquid vanilla extract
  • 1 tbsp white vinegar
  • Red food coloring
  • 25 cl of liquid cream
  • 300 g Philadelphia
  • 100 g icing sugar

PREPARATION

The cake

To prepare the cake, start by sifting the flour, cocoa, yeast, and a pinch of salt in a bowl to obviously avoid any lumps. By sifting everything together, this will also allow everything to be well mixed, but mix again with a spoon to perfect the preparation.

Then break your eggs, separate the whites from the yolks and whisk the whites properly so that they are firm.

In another bowl, add the butter (it must be soft, at room temperature) and the sugar and whisk well until you get a well-blended mixture. Then add the vegetable oil, whisk and finally the egg yolks, continue whisking until the mixture is perfectly homogeneous. Then you add the vinegar and mix again

Incorporate the powder preparation in 2 or 3 times while mixing properly each time until the preparation is smooth. Then add the fermented milk, vanilla extract and red coloring, mix until the preparation is completely incorporated. You can add the red coloring to your liking after all, it is this coloring that will make the charm of your redvelvet cake

Then gently incorporate the whipped egg whites and mix well with a spatula, preheat the oven to 180 degrees

Then butter your mold and pour half of the dough into it, bake at 175 degrees for 35 to 40 minutes. Check the cooking of the cake with a knife blade which should come out clean, remove then bake the other half of the dough at the same temperature. Leave to cool for 10 minutes, unmold

The icing

After making the cakes, let's move on to the icing:

In a salad bowl, pour the Philadelphia cheese, the icing sugar, a teaspoon of vanilla and whisk well.

In another bowl, pour the whole liquid cream and whisk for about ten minutes at medium temperature. Then, gradually add to the first preparation while mixing with a spatula.

The assembly

Now it's time to make the actual redvelvet.

Cut the tops of the cakes slightly, crumble the thin part into a bowl and set aside for decoration.

Place the cake in a dish, and cover with a good portion of cream, then coat with the blade of a knife, then place the second cake on top and coat again with cream on top and also on the edges then delicately stick the reserved cake crumbs on top of your preparation and finally place in the fridge for 2 to 3 hours.
