Truffes au chocolat

Chocolate truffles are small candies or confections made of chocolate ganache ideal for Christmas but also for all times of the year. In this article I show you how to make magnificent chocolate confections that you can easily reproduce at home. I also show you little tips to keep your truffles as long as possible.

  • 130 g milk chocolate
  • 3 tablespoons unsalted sweet butter
  • 2 tablespoons of honey

INSTRUCTIONS

In a saucepan, pour the milk and then place on the heat. Instantly add the honey and mix properly with a spatula or a spatula so that the honey does not caramelize on the bottom of the saucepan. As soon as the mixture starts to boil on the edges, bring; The choice of milk here depends on your taste preferences and the texture of truffles you want to have at the end of cooking. If you use whole milk, for example, you will have truffles with a rich and creamy taste. However, it also contains more fat than other types of milk, which can make the truffles fattier. If you opt instead for skimmed milk which is lower in fat, it can give the truffles a drier and less creamy texture. So, it's up to you to choose.

Pour the chocolate into a bowl and pour in the hot milk, leave for a few minutes to allow the chocolate to melt completely then mix until you obtain a homogeneous mixture. The spatula or the spatula with which you are mixing must remain at the bottom of the bowl so as not to let air in;

Then add the unsalted butter and emulsify. Air must not enter, so be sure to mix while keeping the spatula at the bottom of the bowl. Once the mixture is smooth, the ganache is ready!

Pour into a mold that you have prepared in advance then tap gently several times on the table to remove all the bubbles then cover with cling film and leave in the freezer for at least three hours To have pretty truffles with beautiful symmetrical shapes, you will need to prepare a mold. To do this, take an A4 cardboard paper, make 3 cm marks inside the paper then trace so as to obtain a small rectangle inside the paper. Cut using scissors from the corners of the rectangle on all four sides then fold the edges upwards and put the pieces of double-sided tape on the small square edges then stick them on top of each other edges so as to obtain a rectangular mold. To avoid doing too much math, simply cut the top of a juice carton, then cut it halfway and this will serve as your mold. Then line the mold with baking paper before pouring the ganache;

After three to four hours, remove the ganache from the freezer, unmold and remove the baking paper. Then measure the length and width and do a little more math. 8cm*4 cm for example depending on the dimensions of your ganache and the size of truffles you want. Then cut delicately with a knife in the width direction, then the length;

Roll the truffles or leave as they are, it all depends on you, then leave to rest in the refrigerator for a few moments;

Melt dark chocolate (30%) and milk chocolate (70%) in a bowl and let cool to room temperature. Then add the truffle, turn with a fork so that it is well incorporated with chocolate then remove cleanly and place delicately on a surface covered with baking paper. Do the same for all the truffles and let harden completely in the refrigerator. Above all, clean the back of the fork on the edges of the bowl to avoid getting dirty as much as possible;

Finally put the chocolate in a small piping bag and make thin lines of your choice on the truffles and let harden in the refrigerator once more. The decoration is up to you As another decoration idea you can simply incorporate your truffles with cocoa powder

Tips1 :

Store in the refrigerator : Chocolate truffles can be stored in the refrigerator in an airtight container. This will protect them from heat and moisture, and prevent them from melting or becoming soggy. Make sure the truffles are wrapped tightly to prevent them from oxidizing or taking on the odor of other foods.

Tip 2 :

Store in the freezer: You can also freeze chocolate truffles to keep them longer. To do this, place them in an airtight container or freezer bag, and above all make sure it is tightly closed to prevent any air from entering. Frozen chocolate truffles can be stored for up to 4 months if you take care to package them well. It is important to note that the shelf life of your chocolate truffles will also depend on the ingredients used to make them. To be sure, check the expiration or recommended consumption date.
