PREPARATION

To prepare your pancakes, in a salad bowl simply add all the dry ingredients of the preparation, in particular the yeast or bicarbonate, the sugar, the salt and mix well.

Then you need to flavor the preparation with vanilla. To do this, cut the vanilla pod in half and using the back of the knife scrape the contents and add to the preparation. You can use vanilla extract or simply replace with a sachet of vanilla sugar

In another bowl, break the eggs and separate the whites from the yolks by adding the yolks directly to the dry ingredients and beat the egg whites until stiff, with a hand whisk or an electric mixer. With the mixer it will obviously be easier. Set aside. Beating eggs until stiff is indeed the secret to fluffy pancakes. So if you want fluffy pancakes, make sure your egg whites are firm.

Then it's time to incorporate the milk into the first preparation. Add the milk gradually and mix with the egg yolks. Be sure to incorporate the milk little by little and mix well to avoid any lumps.

Then add the whipped egg whites to the mixture in 2 or 3 stages and mix until you obtain a smooth dough. Then let it rest for 15 to 20 minutes.
COOKING
To cook your pancakes, heat a drizzle of vegetable oil or a little butter in a frying pan over medium heat, then pour in a ladleful of batter. Cook for one minute. When the bubbles appear properly on the mixture, turn over and cook for another minute. Do the same with the remaining batter and stack them on top of each other. All you have to do is enjoy with an accompaniment of your choice: chocolate, jam, honey, strawberries, etc.
