In general, donuts are served in the morning as breakfast, but in Cameroon, bean porridge donuts are a dish, it can be served at dinner as well as at lunch or even at breakfast, in short, as soon as the desire to eat comes, we eat it. It is one of the favorite dishes of Cameroonians, moreover in almost all neighborhoods in Cameroon, there are at least two people (mothers in general) who cook it and sell it on site. Previously this meal was considered "juggler's food" but today it is so envied that it can be found in gourmet restaurants and prestigious receptions such as weddings and other parties. From the preparation of donuts to porridge to beans, in this article the recipe for the famous BHB is explicitly described. Yes, this dish requires a lot of time to make but you will surely enjoy it.

PREPARATION

The process of preparing boiled bean fritters begins with the preparation of the bean

Boil your beans, previously soaked the day before, in a pressure cooker with salt for about 1 hour. If you don't have a pressure cooker, use a saucepan to cook your soaked beans but it will take you longer, 2 hours or so.

After the bean, you have to take care of the dough of the donuts. To do it, warm water, you will need 500ml of water. It is very important to prepare the dough with lukewarm water and not boiling or even cold if you want as a result very soft and well-risen donuts.

Then in a large bowl, add the flour and yeast previously sieved to avoid lumps in the dough, 7 g of salt and 100 g of sugar then add the lukewarm water and mix with your hand until you obtain a homogeneous mixture. To make your donuts a success, you must use your hand and not a spatula or anything else, moreover use this hand to beat the dough for 5 to 6 minutes until it is sufficiently elastic. Beating your dough well will ensure that your donuts are very soft and do not become hard after some time. So do not use an electric mixer. Your muscles will certainly suffer but it is a blessing in disguise.

Then cover your dough with cling film and let it rest for 1 hour to 1 hour 30 minutes.

Now that the dough has risen considerably and formed bubbles on top, it's time to cook the donuts . To do this, heat 600ml of oil in a deep fryer. Introduce the dough in a small circle, slide the dough into the oil with your thumb and index finger. Each movement will count as a donut, put a sufficient number so that the donuts do not stick together.

Turn the donuts from time to time with a skimmer until they are golden brown. This step is quite delicate because if the heat during the frying of the donuts is too high, the donuts could be golden but not cooked from the inside and if there is not enough heat, the oil will enter the donuts and you will have a not very satisfactory result the ideal here would be to heat the oil over high heat and as soon as you introduce the donuts, set to medium heat.

When your donuts are golden brown enough, remove them from the oil, drain, place on a kitchen towel. Before repeating the same process with the remaining dough, make sure that the oil is hot enough before introducing the donuts. ready to eat donuts

To cook the beans, cut the tomatoes, onion, leek and mix the garlic and ginger. You can also choose to mix all these ingredients, it will all depend on you.

Add the cooked and drained beans, then mix with a spatula. Let simmer for a few minutes and bring to a boil.

The porridge

Porridge is corn that has been fermented in water for several days, then mashed and pulped using a fine-hole strainer or sieve. However, you don't need to go through this whole process. You can get it from African supermarkets.
