Bissap is also Guinea sorrel, hibiscus flowers or even the celestial Foléré among Cameroonians. It is cultivated in sub-Saharan areas of Africa, particularly in Senegal, Guinea, Burkina Faso and the far north of Cameroon. Its fresh leaves are used for sauces and other dishes, but today we are interested in dried bissap leaves which will be used to make bissap juice. Bissap juice or Foléré is a fairly easy recipe to make, frankly there are no complications during the preparation and in this article I show you the best course of action to follow.

- A large bowl of dried Foléré leaves
- 2 pineapples
- Pineapple aroma
- Cherry aroma
- Strawberry flavor
- 1 large lemon
- A Clove Fistful
- 10 Lemongrass leaves
- 700 g of sugar
- 3 to 4l of water

PREPARATION

Wash the pineapples carefully because we will need its skins for the recipe as with the pineapple wine. Peel the pineapples and cut into pieces, discard the head and the foot;

In a saucepan, add the pineapple and its skins, the herbal tea, the clove, the lemon cut into strips and the bissap leaves then add 3 to 4 liters of water; ⇒ Indeed, for your juice to have a nice texture and a nice coloring, refrain from putting too much water for a small quantity of ingredients, do things properly and do not apply these tips according to which you must put water as it pleases you.

Let everything boil for 15 minutes and turn off the heat;

Using a strainer, remove the liquid that comes out of the mixture and get rid of the debris that comes out. Try to clean the liquid well so that there is no more debris. You can pass it through the strainer again;

Let the juice sit for about 1 hour to cool;

Then add the flavorings and sugar, stir properly with a spatula. Make sure that the sugar is completely dissolved in your foléré or bissap juice. It's ready! But not yet pleasant to drink, let it cool in the refrigerator before serving or serve it immediately with ice cubes. You have just made the best bissap juice, bravo! Note:
If you do not consume too much sweets, feel free to put the sugar at your convenience, besides the other ingredients above will allow you to have a delicious juice even without being too sweet. In addition, to preserve the bissap juice, it is important to keep it cool to avoid fermentation and deterioration of the quality of the juice. Thus, it is necessary to put it in an airtight container and place it in the refrigerator. It can be kept for about 2 to 3 days. You can also freeze it for long-term storage. It is therefore recommended to also put it in airtight containers before placing it in the freezer to avoid the formation of ice crystals.
