Mashed apples, a Cameroonian recipe from the west, is one of the culinary heritages of the Bamileke people. It is a dish made from potatoes and beans. A fairly easy recipe… in fact 2 to 3 cooking steps, a few ingredients, a pestle or a potato masher and your "pilé" is ready. The recipe for mashed apples that I present to you in this article is clearly a grandmother's recipe. If you don't have a pestle or a potato masher, I will give you an exclusive tip that will allow you to have the same result.
INGREDIENTS
- 250 g black or red beans
- 500 g potatoes
- 450 ml Palm oil
- 1 Onion
- Fresh peppers
- Salt
PREPARATION
1
Wash and soak the bean seeds the day before or 2 hours before
2
Peel the apples by soaking them in salted water for half an hour to remove the water contained in the apples;
COOKING
1
Boil the bean with salt for 30 minutes in a pressure cooker You can also cook your bean in a saucepan but it will take you much longer, because it is a minimum of two hours of cooking by adding a spoonful of baking soda as soon as it boils In fact, the baking soda helps to soften the skin of the bean and this will facilitate cooking;
2
Your cooked bean, pour into a colander and discard the water that comes out. It's time to cook the potatoes. In fact, you have two methods:
The first method:
Wash your peeled potatoes, put them in a saucepan, add salt and mix. Add the chilli and the bean and let cook without adding water Indeed potatoes contain a lot of water and even after having soaked them beforehand in salted water, let them dry so that they are floured; When the water contained in the apples has dried up, if they are not cooked, add 1 glass of water and let the water dry up completely then add oil, then let simmer for 4 minutes; Now mash the contents using a pestle or a potato masher
Now heat some oil in a pan and fry the shallots for two minutes and add to the previous mixture. Add salt if necessary and continue pounding until there are no more pieces of apple
The second method:
This method consists of adding the shallots and the bean in enough palm oil at the beginning of cooking before adding the apples Then add salt, and the bean and cook without adding water for 30min Now mash the apples until you get a nice mixture. ⇒ It is important to mash the apples directly after removing them from the heat to easily get a good result and especially to serve it hot. It is a fairly heavy dish so it is better to eat it during the day rather than in the morning or evening. Personally, either method, you will have floured mashed apples with an appetizing taste, and especially an incredible smell (because the smell also counts) Bon appétit!!
The trick:
So if you don't have a pestle or a potato masher, just take a 1l bottle full of water, clean it well and crush gently, you will have the same result as with the pestle and your mashed apple recipe will still be just as successful.
Note:
♦ Potatoes are a source of several important nutrients for health. They contain vitamin C, vitamin B6, thiamine, and niacin. They are also a source of minerals such as potassium and magnesium. Additionally, potatoes contain dietary fiber, which can aid in digestion and satiety. Beans, on the other hand, are rich in important nutrients for health, such as protein, fiber, vitamins (especially vitamin B9 or folate), and minerals (like iron and potassium). They also contain antioxidants and phytochemicals that may help reduce the risk of certain diseases, such as heart disease and some types of cancer. ♦ That said, you can enjoy mashed potatoes however you like. However, the mixture with palm oil can be quite energetic and fatty, avoid consuming too much in the morning or evening at bedtime ♦ For storage, put your meal in the freezer or refrigerator, especially do not be skeptical, when you are going to reheat it, it will still be just as good, moreover this dish has the reputation of being even better when reheated. ♥ You would probably like other Cameroonian recipes such as Ndolè , DG , taro …
